About the Oysters
The oysters are all organically grown - the spawn is caught upriver and the baby oysters are moved onto our slats and remain in their river habitat, where they belong, while they grow.
While in the river the oysters act as water filters, actively cleaning the water and the local environment. The pristine waters of the Karuah river rise out of the southeastern slopes of Gloucester Tops in the Great Dividing Range and flow down into Nelson Bay. These waters produce pristine oysters that are fresh, succulent and as far as we’re concerned are the best in the world.
You can buy our oysters wholesale (unopened in their shells) and soon you'll also be able to buy them from a farmers market near you.
